What to do with canned salmon ?

I bought some at Aldis trying to work salmon into my diet- can't stand the filets with skin on them- was hoping for low carb salmon patty recipe or any ideas you can give thanks !

    make it like tuna salad with lots and lots of mayo

    Just add eggs and fry up some salmon patties.

    OMG -- i just made the most amazing thing with canned salmon. They are baked parsnip/salmon cakes.

    I modified the recipe to sub 1/2 # of parsnips for almond flour (just enough to hold together) to lower carb count)

    1 big can salmon
    1# parsnips -- cut to chunks, boil until soft, drain, mash (not puree -- leave it a bit chunky)
    Add dill, garlic powder, salt & pepper
    form cakes (i used a 1/4c scoop so same size)
    add parchment paper to cookie sheet, then grease (i used a coconut oil spray)
    brush butter or coconut oil on the tops of the cakes
    bake at 425 for 15 min or so, then flip and cook another 10 min or so until brown and crunchy on top

    Ate them with a dallop of Sir Kensignton's chiptle mayo. Also considering doing them up hollandaise & poached egg style.....

    That sounds good. Do you mix the salmon in with the eggs, and then form the patty? Sorry to sound dense, I've never done that.

    I think so, the egg just acts as a binder I believe.

    That's what I do. Just mix canned salmon with eggs and fry. You could add some almond meal or coconut flour if you need more binder.

    Depends on your approach, of course, but I put it on top of a salad.

    Also, I've heard of salmon mousse, but never eaten it. I'm sure there is a LCHF/Keto version of it out there...

    Chop up some green onions/scallions, too, and mix that in.

    I mix the salmon with some mayo, green onions and broccoli slaw mix. Its very filling!

    salmon, sour cream, and dill-yum; serve over salad or with cucumber/celery dippers.
