Corned beef "quiche"

This is one I pinched from slimming world but it's a good one. mash a small tin of corned beef on the botton of a quiche or pie dish. Add a layer of chopped onions, then cover with a mixture made up of 200g of low fat cottage cheese and a medium egg beaten together. Top with thin slices of tomato and a sprinkling of mixed herbs and cook in the oven for approx 1/2 hour or until the tomato looks cooked. Let it cool completely in the fridge before eating. Divided into 12 slices this works ot at around 65 calories a slice, and can be eaten as a tasty snack or with a salad.

I was looking for something to do with a can of corned beef. This is a great idea! I'm going to try a cabbage & corned beef casserole tonight. Let you know how it works out.0
