I'm going to a friends house for Easter dinner. She is serving ham, mashed potatoes and gravy, asparagus, rolls, and maybe some kind of salad. Of course, some kind of carb-laden dessert as well. She knows that I am eating very low carb. She asked if I was only going to eat ham. Well, am I? Any suggestions? I told her maybe with some asparagus and a big dollop of mayo!!!! What do y'all think?

I try and avoid honey-baked ham, as a matter of avoiding added sugars. But, I've had it when someone else made it before. I am not a huge ham fan to begin with.

Personally, the ham should be fine. I'd avoid the gravy. Asparagus and some sort of fat for the ham should work fine. Maybe make some hollandaise (sp) sauce?

Thanks. I'll probably ditch the sauce-don't need it anyway. Just the ham and asparagus. I'm not a big ham eater either so at least I shouldn't overdo it!!

Yup, make something else, like spaghetti squash, it will go nice with ham :)

Then she shouldn't be offended if you take along food that you could eat. That's what I would do. Especially a low carb dessert such as a cheesecake.

Take something delicious and enjoy the social occasion.

I completely agree. If someone was coming to me for a meal and I knew they were *whatever eating plan they choose* I would be sure to provide items (that's a plural) that they can eat. Or at least tell them I will provide x, y, z and can they bring their own dessert or something. I would never expect a guest to sit and eat a plate full of one or two items and potentially make a spectacle of them. Hope I'm not being too blunt, but I have a cousin who does this to me, despite the fact that I ask her if she would like low calorie foods, which is her thang, when she comes to me. She also points at me and ridicules me for everyone to hear for the amount of mayo and butter I take. I've learned to hide my mayo on *my* side of my lettuce leaf where she can't see, but she buys the thick brand that you have to wait ages for it to come out of the bottle., *and* only ever has an inch of mayo in the bottom of the jar so I can't take it all for fear of being greedy ROFL

If it's a standard green salad, then that should be doable under most low-carb ways of eating. The asparagus is a good option, too.

You can also remind her that "low carb" doesn't mean "meat only" or "no carb."

Just agreeing with everyone else! Ham and asapargus. If you want more veggies, Just for more ideas on things to pass, I like making a broccoli and cauliflower salad with mayo, splenda, bacon, and shredded cheese or a tray of summer sausage and cheese (and crackers for everyone else).
