nut butter questions

I have found almond and peanut butters are easy fat sources, great to blend with 90% chocolate, and other flavors. I bought a second jar of almond butter ($14) yesterday and noticed it had added sugars already. Does it make sense to make your own nut butters and do any of you do it? I'm a little uncertain about our recipe threads, adding or requesting informatin as far as this group is concerned. Experienced and expert advice is appreciated. ;)

    It can be tricky to find ones without added sugar but it is possible. Smucker's makes a peanut butter with salt as the only added ingredient. My local grocery has an almond butter made with almonds only but it is a bit pricey. I've found that adding 1 tbl of ground flax seed to 1 lb of peanut butter will keep the oil from separating.

    You should be able to make what you want with just a food processor & nuts then add what you want but someone with experience could help.

    If you combine the nut butter with flax seed, does that make it go rancid quicker?

    I make my own in different varieties. I just made pecanbutter, with a little vanilla extract and about a tablespoon of maple syrup (ups the carbs a tiny bit, but for twelve servings it's nominal) and a tablespoon of coconut oil. You just need a food processor. I like being able to control what goes into it, and all the above ingredients cost me $4 (well, I had the oil and syrup). I have also made cashew butter, but cahsews are more carbish....I want to try macadamia but butter but am afraid I will eat the entire container at once! If you want specifics, just message me or ask or just experiment :)

    I add the flax seed meal to my peanut butter fresh ground. I mix a table spoon of each to use up quickly. I was told Flax seed should always be fresh ground to not lose the goodness in it. Ground flax seed makes for a wonderful nutty flavor to many foods. I use my little coffee grinder to grind it. Takes about 15 seconds. If added to a large batch of some thing I would consider putting it in the fridge.

    I lurve nut butters. Often grind my own at the local market, including a chocolate mix.

    In the UK you can get pure nut butters in the health food shop but are pricy eg 3.75 pounds for a hazelnut butter of 170g. Very tasty tho'!

    Thanks for all of the great ideas. I have a Ninja blender and perhaps that will work for the grinding. I look forward to experimenting with different nuts and adding the flax seed. We are snowed in today so will have to wait to shop for now. The PB diet was news to me! I could never trust myself to eat it that often without adding strawberry preserves :o

    I store both nut butters and ground flax seed in the refrigerator. I've never noticed a problem with the oils in either going off.

    I make my own. I activitate the nuts before then make the nut butter. I like the idea of adding flax meal. I might add some unsulphured blackstrap malasses to the mix next time. I read it can turn grey hair back to original color. Taking the vanity aspect out, I read it had all sorts of micro nutrients that are good for overall health. The taste takes some getting used to, but hidden in the nut butter should be ok.

    HA in turning the gray hair back. Believe me I tried it to the point I HATE the blackstrap=months. No change in my gray hair. I was hoping too though. Maybe it will work for you. Like the rest of my family I turned gray very early= started in the 20's.

    The winco near me let's you grind any nut they have into butter, it's literally just nuts that way.

    I too have made nut butters. My fave is a home made nutella, and also a spiced pecan butter.

    THIS!!! I have eaten almost the whole container of pecanbutter I made....I am ashamed. :o

    Oh I have not tried to make those yet, I am afraid for the same reasons. Though having one a little before a good work out seems like a great idea. I am just afraid I lack the self control LOL

    Been there, done that! Oh yes, apparently the strawberry preserves aren't necessary to prolong the nut butter feasting. :s
