I did a low fodmap and AIP cleanse at the beginning of the year. I had been wondering if a Low Fodmap diet would beneficial for me but it seemed impossible. What would I eat? My fiancee agreed to eat the same dinners as me. He had said he would try it for a week. I think both of
us were thinking food would be lame but were going to do it for my health. To our surprise the meals have been very good. So good that we would add them to our meal rotation.
Sample Recipe - Shepherd’s Pie
• 1 tablespoons cooking fat
• 3 chopped carrots
• 3 chopped parsnips
• 1 chopped leek (green parts only)
• 2 minced green garlic stalks
• 1/2 teaspoon sea salt
• 1 tablespoon cooking fat
• 1 pound ground beef
• 1/2 tablespoon apple cider vinegar
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried oregano
• 1/2 teaspoon dried rosemary
• 1/2 teaspoon sea salt
• 1/2 teaspoon ground ginger
• 3/4 cup broth (p. 15)
• 3 cooked turnips
• 3 tablespoons broth (p. 15)
• 1 teaspoon cooking fat
• 1/2 teaspoon sea salt
• 1/2 teaspoon ground ginger
Heat fat over medium and saute the carrots, parsnips,
leek, garlic, and salt 8-12 minutes. Meanwhile, heat
another tablespoon of fat in a second skillet and cook
the meat, vinegar, thyme, oregano, rosemary, salt, and
ginger until the meat is cooked through. Preheat the
oven to 350F. Mix the veggies and meat together in a
large baking dish and pour broth on top. Combine the
remaining ingredients in a food processor and process
until smooth. Spread on top of the meat and veggie
mix. Bake uncovered 30 minutes. Serves 4.
