This past weekend we were snowed in- and I took the opportunity to test out several recipes from my Pinterest board (https://www.pinterest.com/melismusing/paleoprimalketo/).
I thought I would share the results here, in case anyone wants to try them out.
Recipe 1. Oven fried garlic parm green bean "fries". These were SO. DAMN. GOOD. Easy to make and I loved the egg and olive oil bath before dipping into the shredded parm - seemed to make the cheese stick better. Recipe 2. Avocado Oil Mayo/Basil Dipping Aioli: I was intimidated by the idea of making my own mayo- and I don't know why, it was super easy and SO tasty. I added basil and garlic to half of the batch to make a dipping aioli for the green bean fries and for some yummy meatballs that I made. Recipe 3. Crazy Good Meatballs. I can only say this: everyone was mad that I didn't make more.

Recipe 4. Almond Butter Cookies. This recipe needs some tweaking. The batch I made was a little too crumbly, although a day later they were a better texture. Needs work. Please note I already subbed out the peanut butter for almond butter - AND I didn't use the sweetener the recipe calls for, I used 2 T grade B maple. Recipe 5. Coconut Flour Waffles. Boy were these good. The recipe was easy, and I am already thinking of a savory version like garlic and cheese to use as a base for eggs benedict. Recipe here: http://justenjoyfood.com/2014/01/fluffy-coconut-flour-waffles/ Carbs = 6 total, 3 net if you do that sort of thing.
All in all I was a cooking FOOL this weekend and loved every second. I wish I would have taken more pictures- but delicous food waits for no camera. I do have one shot of the cookies...

My husband doesn't understand why I can't/won't eat french fries on this WOE, and I did have a dream this weekend that I was devouring fries all the while realizing I wasn't supposed to be but doing it compulsively like I literally could not stop myself. LOL. My point is, I NEED some substitute fries in my life! Thanks for the links and reviews.0

Mami- these were pretty good! I can't wait to try the same coating on zucchini and asparagus. They kind of had a tempura like texture. Let me know if you try them!0

Thanks BB, the 'fries' and mayo recipes look appealing to me. I had made a mayo myself and didn't like it at all - this one looks fantastic!

Crazy question: Do the coconut waffles taste all that coconutty? I can do a mild coconut flavor, but not a crazy strong one.0

Looking at the recipe, though I'm not sure how much coconut flavor comes through in the coconut flour, they should be pretty mild, because I personally can't stand the flavor of coconut, but I can do coconut milk in recipes....and even then, there's not much of that...0
