no oil semolina porridge (Indian upma recipe)

1. In a non stick pan add in mustard seeds, whole dry red chili, 1 tspn of any yellow lentil and curry leaves (available at all Indian stores).
2. Stir till the yellow lentil is roasted (around 1/2 a min) then add in 1/2 cup of semolina, salt to taste and 1 tspn vinegar. Add in paprika and stir for like a min.
3. Add in 2 cups of water and cook till the semolina has a porridge like consistency. Turn off the heat.
4. Enjoy with fresh cilantro chutney (cilantro + lime juice + salt + 1 tspn sugar)
