So, everyone, if you knew me pre-LCHF/Keto, you know that I worked the Renaissance Fair locally last year. This is essentially 4 days of on my feet all day, few breaks, eating on the run, refrigeration only in cooler, etc. I managed okay last year, but I wasn't eating the Keto way of life then. (Next week, Thursday through Sunday.)

Obviously, I'm thinking of packing things like: pepperoni sticks/slices, cheese, beef jerky, pickles, nuts, and stable fat bombs. Oh, and the makings of BPTea...maybe a thermos of super hot water so I can make it onsite, and broth too. Like a case of water!

I'm not as concerned with keeping carbs under 25 grams, but more like 50 grams, for the day, though it will be adjustments, for sure. If I can swing the finances, I can definitely get a turkey leg or something while out there, but that is unlikely (due to cost). Luckily, I'm a month in, and by next week, will be 5 weeks in, 9 since low carbing it, so I'm pretty adapted and don't think it'll be difficult, especially if I do snacky food (nuts, etc.) if absolutely necessary with more than one BPT and do a form of IF....

So, please, all, I'll look back at that post about surviving hotel/conferencing to see the suggestions there, but any suggestions/advice. We usually leave home 7 am, arrive on site by 8 am, work until 6 pm or later, get home by 7 pm, and have ZERO interest in cooking (we did pizza last year each day, I think, though I can do related prepped nosh, but I'm looking at the same types of more convenient food at home as during the day...)... I really really don't want to knock myself out of Keto, as the ventures I've had out of it (bites of snacks off plan) were pure hell, and the "flu" getting into keto wasn't fun either...

    I would also check the fast food post for ideas of things that are keto friendly you can pick up somewhere on the way home - 5 Guys and Jimmy John's do lettuce wraps for any of their sandwiches, most of the fast food chains let you order bunless (though you may have to explain it slowly depending on who's working), and honestly, if you're careful with carbs the rest of the day, scraping the top off a few slices of pizza won't knock you out, even if the sauce is sugar heavy. Just make sure you don't have one with tons of extra sauce on it.

    If you want something easy and make ahead you can have waiting to reheat, I make a cheeseburger casserole with two versions. The basic mix is browned ground beef, 2 strips of crumbled bacon per lb of beef, 1/2 c of shredded sharp cheddar per lb. I split that in half, portion one half out into ziplock bag servings for me, freeze some, and throw one or two in the fridge. I take the other half and mix it in a casserole with 1/4c beef stock per lb and 2/3c elbow macaroni per lb. Squish it down, sprinkle more cheese on top, and bake at 350 for about 35-45 minutes (3 qt vs 5 qt). The baked version is for the guys, the ziplocks are for me. I reheat them, add a little mayo and mustard, sometimes a pickle.

    My local walmart has this. I travel for work and take bacon jerky, quest bars, olives, and almonds/macadamias. Also a water bottle. That's my entire meal selection for when I am gone.

    ETA: the above is only when I am traveling via air. Car/cooler travel can also include buffalo chicken dip, spinach dip, LC veggies, artichoke dip, French onion dip, peanut butter (not for me,but for others with portion control), cheese crisps, cheese, deli meats, cold burgers, whole pork tenderloin cooked and pre-sliced, stuffed mushrooms, pimento cheese (with jalapenos and bacon), sugar free pickles, etc, etc

    That sounds like SO much fun! The closest RenFaire is in Denver- I am hoping to go this year. Sounds like a challenge though- so I would definitely over pack snacks and food- and have some pre-made meals at home when you get back at the end of a long day. I know for me, tired and hungry are like the ultimate danger zone. If I don't have something I can shove in my face asap, well, lets just say it's not pretty.

    I like the idea of cheeseburger casserole. I'd also cook up a bunch of hamburger patties. You can top them with avocado, bacon and a fried egg, and that's pretty quick and yummo.

    As far as a travel stable fat bomb- I mixed up some almond butter, coconut oil and cocoa (you could add espresso powder too and I bet that would be delish) in a half pint mason jar and that's pretty much fit the bill for fatbombs lately.

    You can doooo it!! Also, we're gonna want pictures of the fair. :)

    Last year, we barely got a break to pee and maybe grab a bite. I didn't take a single picture myself. I have a couple that someone else tagged me in on FB, but no really good ones... LOL If I have a moment, I'll upload them. And I made my costume, so no judging! LOL

    I haven't seen bacon jerky yet, but I will SO look... I forgot about pre-cooked bacon (either bought or made myself)...that could help.

    I don't much do dips, because what do you dip in them? A spoon? I can do cheese crisps for somethings, but not everything.... Did forget about pork rinds though...

    Any ideas for your dips as far as recipes?

    My guy loathes casseroles... I could probably do this taco salad style (in a baked tortilla shell, he loves those). In fact, whenever I make up taco meat, I usually do it by the 4-5 pound chunk. I might just make up that and keep it. Have to dice/tear lettuce each time, but thank goodness we both love Mexican!

    ....OR maybe bacon burgers with the bacon in them...grab, reheat, go!! Yeah....

    Upturned large mushrooms make a quick pizza base. Top as you please with cheese, pepperoni etc that can all be grated, sliced prepped days ahead and then baked or grilled (broiled) while you unpack for the day? I hope you really have a good time Carly.

    Oh yeah, portabello mushroom pizzas were one of my favorites the first time I went low-carb! Thanks for the reminder--I think I'll pick up some shrooms today! :)

    I'm weird about mushrooms. I can do them in stir fry, diced in meatloaf or sauce, or dehydrated on pizza, but dont' think I'm to the point of using them as crust...LOL
