I'm sure this, or something similar, has popped up here before.

Mayo, made with an immersion blender, where you don't have to drizzle in the oil. I made mine with half light olive oil and half MCT oil, and it seems thinner so far than the stuff I made last time with straight up MCT oil, but it also hasn't spent time in the fridge yet.

I saw that recipe on another site but haven't made it yet. It looks so easy!0

The light olive oil and MCT blend failed. I did the next batch with straight MCT, and it came out marvelously.0

I use avocado oil.
And ya, stick blender is the way to go!0 -
This is the one I use, same method it looks like, but this one has pictures and animations

I do mine often with straight light olive oil, but I've been enjoying it with about 1/5-1/4 of it with walnut oil. I've found that when my house is colder, I need to warm the egg up in my hands for a minute or so, otherwise it doesn't set up as firm as it does when it's warmer.0 -
I use the same recipe as @Dragonwolf, and I do not have an immersion blender. I have a whisk attachment for my hand mixer, and that worked great!0
