pork tongue and heart?

a couple of friends butcher in the spring and always give me a lot of their offal because they know i'm a weirdo. ;-)

i always give the beef tongue away to my ex because i know his aunt (guatemalan) will make good use of it, and i just can't even with the lengua. (it's a texture thing).

this time i got pork heart and tongue, which i never have before, and i am just kinda staring at it because i have no idea what to do with it. any suggestions? i wish i had a grinder, i would make sausage and throw it in.

might toss it in the slow cooker along with some chicken gizzards i was gonna cook (making moellas).
