I had to share somewhere. I made keto cheese cake to bring to my bf's family's house for Easter. I got home from work yesterday, and it was all gone... I'm glad it was good but now I have to make more with no time to do so.

    So I did create an entry in my recipes for this version. I used xylitol instead of Splenda, and 8 slices looked like the pieces would be enormous, so I set it as 12 servings.

    This recipe was awesome. Like I said, I swapped the Splenda for xylitol, and I forgot to mention I used the processor to chop almonds for it instead of pecans. We are already planning variations to try for our birthdays (and figuring out how to not have to share any...)

    I think my grocery store has it near the sugar, and I know I can get it at all the natural-type food stores. Alternatively, there's always Amazon.

    Does anyone know of a no bake recipe? I have a low carb pudding pie thing I can make for Sunday but cheesecake sounds good and my oven is broke.

    My husband wants to try a no-bake as well. I think with the non-flour crust you still need to bake that part.

    My next-day report is that I do feel bloated from the xylitol, and my weight is up. Could be from pairing it with a fathead pizza, but I think it's more the xylitol.

    Already trying to figure out how not to waste the rest of the cheesecake when I don't really want to deal with the xylitol any more. I want to experiment with granulated truvia / liquid stevia versions.
