Let's share some of our favorite recipes!

    my favorite recipe is strawberry tropical vegan shakeology. I use one scoop or packet of tropical strawberry vegan shakeology, 1 cup almond milk, 1/2 cup of granola, 1 banana, blended with 1 ice cube and 1 scoop of shakeology fiber boost. Not only does it taste great it is how I start my morning.

    Baja chicken salad:


    Dressing
    1 1.25 oz taco seasoning
    1tbsp Brown Sugar
    1/2 c veg or olive oil
    1/2 cup apple cider vinegar

    Mix all ingredients together, marinate chicken in 1/2 of the dressing for a few hours or overnight. cook chicken in skillet with a little bit of olive oil. Once cooled, cut or shred the chicken.

    Salad,
    4 chicken breast
    1 10oz Mixed Salad greens
    1 cup grape tomatoes
    1/2 red onion chopped
    2/3 Monteray Jack cheese, shredded
    8oz Black olives slice

    Mix all of the ingredients together. Add the cooled chicken

    Toppings
    Sour Cream
    Tortilla Chiips

    When assembling the salad top with sour cream, crushed tortilla chips and dressing.

    Notes: I typically double the dressing to ensure I have enough.

    1/2 cup black beans
    1 cup Tyson pulled chicken
    One and 1/2 packet goya chicken seasoning
    Four medium flour tortillas

    Serves four and is delicious!

    Fried(?) zucchini (+ zucchini broth), like my grandmother makes

    Dead easy, so delicious (and useful):
    Grate several zucchinis (remember they reduce by about half when you decide how much to prepare)
    heat a splash of olive oil in a pan on medium heat
    add the grated zucchini and salt to taste
    sautée until the zucchini has released as much liquid as you think it will
    drain the grated zucchini, and reserve the broth because it's delicious too
    return the zucchini to the pan, and wait for the bottom to caramelize
    scrape up the caramelized bits and mix so the flavors are evenly distributed

    Makes a good substitute for any high-carb side dish (like rice or pasta). You can also fold it into some mashed potatoes to make the zucchini more hearty and the potatoes more healthy. Had this with roast chicken for dinner tonight, and I'm going to drink the broth for breakfast.

    My favorite healthy recipes, honestly, are just simple combinations of good things. A light meal of a roast potato, a fried or poached egg, half an avocado, and some balsamic vinegar is heavenly, healthy, cheap, and easy. I also like to mix a half teaspoon of cinnamon, a pinch of ginger, a cup of boiling water, and a teaspoon of honey for a nice energy-sustaining tea.

    And I don't know if this is common knowledge (sorry if everyone already knows about this), but you can substitute mashed avocado for butter in baking. It makes everything a bit more dense, so you should add extra baking powder if you want more fluffiness - and just add food dye if the fact that it's green bothers you! :P
