Anyone go low carb/grain free for health reasons (not weight loss)?

    I had an upper endoscopy a few months ago that showed damage that is possibly related to celiac disease (they said it was either that, overuse of NSAIDS, or an eating disorder, and I know it's not either of those 2 things). I've also had a ton of odd health issues for the past 7+ years, which is sad because I'm only 30! My blood tests all come back mostly normal though- I've had some different vitamin deficiencies (at one point when I was pregnant with my youngest my vitamin B12 level was 25... "low" is 250!) but when they test for specific illnesses the tests always come back normal. Even my celiac blood test came back normal, in spite of the scope showing inflammation and villous damage! They've been doing MRI's to watch for MS for the past 4-5 years... I have several "hallmark" MS symptoms (eye issues, choking on food/drink, random numbness in extremities, etc) that seem to only be getting worse so if nothing shows on this year's MRI I'll probably ask for a spinal tap.
    So anyway, I was planning to go gluten/grain-free anyway, and just happen to have about 50 extra pounds I need to lose, so I decided keto would kill two birds with one stone by eliminating the grains and helping me lose weight too... One super awesome benefit has been that I haven't had a migraine since the first week or two of starting to eat keto, and I used to get them at least once a week!

    Going grain free is the only way I can stop going on binges. I've never been very big (borderline overweight BMI at my largest) but I really believe I have a problem with most grains, especially wheat. They also give me a huge belly and the worst stomach cramps, gas and diarrhea even in what most would call moderation. My husband gets pretty angry with me when I eat wheat because he has to deal with me LOL. I was diagnosed with IBS and told I could test for celiac, but I'd rather not start eating it again.
    I also have hashimotos and seronegative arthritis (ankylosing and psoriaitic). I feel avoiding grains help me manage my symptoms related to these illnesses. Whether it directly helps or helps because I feel better overall, I'm not sure. I'm beginning to be healthier than I've been in years, so I'm happy!

    eta: my most recent blood panels came back great, except for the D issue. Glucose, cholesterol, iron etc are all looking good.
