Vegetarian Easy Lentil Soup

First, ingredients. You need some pantry items.

Ghee--get the grassfed version, the health benefits are just too good to pass up, don't settle for ordinary ghee. It's butterfat without the milk solids. Has a butter taste, but is not allergenic for milk sensitive people. High smoke point, so good for high heat cooking.
refined coconut oil-- this is coconut oil with the flavor of coconut removed, so you can fry/saute anything in it. High smoke point. I won't be including this ingredient in this recipe, but future recipes.


Easy peasy soup
chicken breast-- put a package of chicken breast in a baking dish, lightly season with basic seasoning (salt, pepper, garlic powder, squeeze of lemon juice). COVER with tin foil tightly and bake at 350 while you make the rest of the soup:

lentils -- pick your color, red, green, orange -- empty a small pouch of lentils into a med size pot, add some salt and enough water to cover by about 2 inches and bring it to a boil. Add a little more water if it starts looking thirsty in there. They don't take long to cook, maybe 15min or so until they get tender and start to break up.

veggies -- in another med pot, put a T of ghee in there and turn on the heat to about medium high. You're going to saute some veggies: yellow onion (or shallots if you can get them!! they are super tasty,and have really nice health properties, they are actually in the garlic family), carrot, celery including leaves is nice too. Season with salt and saute until they start to get soft. So like half a small yellow onion ( or 2 large shallots) chopped, 2 stalks celery chopped, 2 large carrots chopped.

Mix it up -- add the contents of the lentil pot into the veggie pot. Get the chicken out of the oven now. It should be basically cooked, with broth in the pan. Chop up the chicken breast ( like 2 large breasts) and put that and the broth into your soup.

Season it -- Season with some oregano (1/2teaspoon), some more salt , and add a touch more garlic powder if you think it needs it. If you want a kick you could add some cayenne or black pepper to individual servings or into the pot.

That was a lot of explaining, but after you do it once you'll not have to read your way through it, and you'll see it's really just a quick meal. Well actually that would easily make two meals. Yum, now I want some for breakfast!
