Mayo made with bacon grease

While I'm certain it will be awesome when we make burgers tomorrow, homemade mayo made with 3/4 bacon grease tastes just plain weird in tuna salad.

My mind boggles at how much bacon you would have to eat to produce enough grease for mayonnaise making!

Yeah, that doesn't sound tasty. Try avocado oil for mayo making. I can't eat it due to the vinegar, but hubby makes spicy mayo with avocado oil and likes it b/c it doesn't taste "oily".0

I used lemon juice & added a bit of dijon mustard for flavor.My mind boggles at how much bacon you would have to eat to produce enough grease for mayonnaise making!
I buy the big packs at Sam's and cook them in the oven on cookie sheets covered in foil, then drain the bacon grease into a grease jar with a strainer. We probably go through a pack and a half in a month or so...0 -

How well does bacon grease mayo keep? Does it get harder in the fridge?
I've made coconut oil mayo before and I love it, but it gets so hard I need to thaw it out to use it. I just tried again using olive oil, and that was pretty good. Avo ado oil sounds good too.0 -
I used 1/4 MCT Oil and 3/4 bacon grease. It does get a bit harder in the fridge, but I can still spread it on a hamburger just fine.0

I have never thought of that! I have a pickle jar full of bacon grease in the fridge. This I will have to try!0
