Also, I saw some people posting about eating low carb for 6 days of the week and then one day eat high carbs? How exactly does this work and how does this help?

This is called carb cycling. It works for some people, not all. I find that if I keep my carbs between 30-80g a day (which is not super-low-carb) five or six days of the week, and then boost my carbs to between 100-150 one or two days a week (never consecutive days, though), I do much better. I don't get cravings, I have good energy levels, and I stay in fat-burning mode.

When I was consistently eating 50-80 carbs a day without a higher carb day once a week, I lost weight for the first six months, but then stalled. It was like my body got used to the lower level of carbs and started hanging on to the extra weight. Carb cycling keeps my body guessing, I guess.
