Curry Chicken Salad (109 calories)

This recipe is for a large batch (8 servings @ 109 calories per serving)
3 Grilled Chicken Thighs (chopped) *seasoned with black pepper, garlic, paprika, cumin, and curry
-I used a kitchen grill (George Foreman Grill)
1/4 Red Onion (diced)
1 Roma Tomato (diced)
1/2 Cucumber (peeled and diced)
1 cup Frozen Petite Peas *Add frozen, will defrost when all ingredients are marrying
1 cup Kimchi with 1/4 Kimchi juice
1 tsp Celery Seed
4 TBSP Mayonaise
Splash Apple Cider *optional
Add to taste:
Curry Powder
Granulated Garlic
Black Pepper
Coriander
Cumin
Toss thoroughly. Will be slightly watery. Refrigerate for an hour or so (until peas are defrosted)
Portion out 1/2 cup (109 calories)
on Wheat Toast +69 cal.
on White Toast +64 cal.
Or Mix is with 2 cups Lettuce +16 cal. *My favorite!!*
