Greek Salad Pita Pizza

very fresh flavors and very easy and simple to make. Great for lunch or a nice snack.

Ingredients
2t apple cider vinegar 1t EVOO
3T chopped kalamata olives AN S&P
1T chopped Onions 3/4C hummus
4(1oz) whole wheat pitas split/toasted
4 slices heirloom tomatoes
1/2C chopped cucumbers
1/2C chopped orange bell pepper
2T crumbled feta

Method
In a small bowl whisk together salt pepper, vinegar, and olive oil. Stir in olives and onions.

Spread 2T hummus on each toasted pita. Top each with a slice of tomato, spread 1 more tablespoon hummus in the center of the tomato, and top with the cucumber, bell pepper, onion-olive mixture, and feta. The enjoy
