This one is one of our favorites in my family:
Trim the chops of all visible fat and butterfly them completely making two thin pieces out of each chop.
Dip them in warm water and then coat in whole wheat panko breadcrumbs (I add garlic powder and whatever other seasonings sound good to the breadcrumbs and sometimes a little grated romano cheese).
Place on a baking rack on top of a cookie sheet and spritz with olive oil.
Bake at 400 for 20-25 minutes.

They come out crispy and light every time!

I make 2 different recipes that are both pretty good.
    Crockpot pork chops
    1 can cream of chicken
    1 cup chicken broth
1 package of dry brown gravy mix
Cook on low for 2-4 hrs I usually serve with mashed potatoes because they have a great gravy
    Pork and Rice
    2 cups rice
    2-3 cups water
    Dry onion soup mix
    Cream of mushroom
I used about a lb of pork chops and cut it up into small pieces but, you can use them as whole.
In a 9x13 pan put in your rice and water than add your pork chops put the soup mix and cream of mushroom on top spreading it around. You can add a little more rice if you want or even some cheese or French fried onions on top. Back about 20 mins with aluminum foil and 20 mins without aluminum foil. I believe it is at 375

Last night I stuffed one with goat cheese and spinach. Topped with a little bit of balsamic glaze.

I love pork chops so I usually just do a pan sear then either lower the heat and cover or finish in the oven. They are too delicious to smother with a lot of sauce or breading.

My favourite way to prepare porkchops is cacciatore. I have a recipe on my blog but with chicken http://www.myfitnesspal.com/blog/GsKiki/view/light-chicken-cacciatore-784591
The only difference for preparing porkchops is cooking around 20 mins longer. They come out very juicy and tender.

Coat in crushed ritz and parmesan cheese, salt and pepper and bake.

Make a sauce with low fat cream cheese, chicken stock, and green onion. Easy, good, and the sauce is low calorie if you just lightly drizzle, somewhere around 60 calories.
