Low carb soft serve ice cream

Last night I made SUCH a great treat. I have been dying for ice cream. Its my favorite thing ever. So I took 2 cups of heavy whipping cream and a box of sugar free choc jello pudding and put them in the blender - then froze for one hour and it tasted EXACTLY like soft serve from the ice cream store. The HWC has zero carbs and the Jello SF pudding has 8 carbs per serving - 4 servings per box.

I posted this on a facebook group - and got completely beaten up over it. Is it really that bad? The hubs and I split it into 4 servings - one for each of us and one for our 2 kids.

    Who beat you up over that. That sounds really good. It's probably higher than some people would have for carbs, but you can't find ice cream that low in carbs, at least I can't. There are probably other ways to make it lower carb, but that sounds nice and easy.

    What kind of group was it, and what were they beating you up over?
    When I was sick, I bought some sugar-free jello from the grocery store. It had aspartame in it, but at the time, I didn't have any other options. Apparently, aspartame is the current artificial sweetener devil, so that might have been why. Just guessing. When you're as sick as I was, however, you want things you can just grab off the shelf. Now I have other options, like no sweetener added gelatin that I can mix with flavourings and sweeten with stevia instead.
