Im a fulltime working mom and i find it hard to decide on what to eat . Any quick low cal easy to make meals ...tia

    I made this last night. It's really, really good. I added dried oregano. Also upon weighing everything it came out to more like 350 calories or so.

    Italian-Style Chicken Bake
    1/4th of recipe (about 1 cup): 258 calories, 8g fat, 828mg sodium, 12.5g carbs, 4.5g fiber, 3g sugars, 32.5g protein -- PointsPlus® value 6*


    Prep: 20 minutes
    Cook: 35 minutes

    Ingredients:
    1 lb. raw boneless skinless chicken breast cut into bite-sized pieces
    1/2 tsp. each salt and black pepper
    2 cups seeded and chopped tomatoes
    One 14-oz. can artichoke hearts, drained, rinsed, chopped, patted dry
    2 tbsp. all-purpose flour
    2 tsp. chopped garlic
    2 tsp. olive oil or grapeseed oil
    1/2 cup chopped fresh basil
    1/2 cup shredded part-skim mozzarella cheese

    Directions:
    Preheat oven to 350 degrees. Spray an 8" X 8" baking pan with nonstick spray.

    In a large bowl, season chicken with salt and pepper. Add all remaining ingredients except basil and cheese. Mix thoroughly. Transfer mixture to the baking pan.

    Bake until chicken is cooked through, about 30 minutes.

    Sprinkle with basil and cheese. Bake until cheese has melted, about 5 minutes.

    MAKES 4 SERVINGS

    Talapia & Veggies in Foil

    . 4 oz raw, Sea Queen Talapia Fillets
    . 1/2 medium Zuchinni Squash cut into pieces
    . 1/2 cup, Mushrooms Pieces and Stems
    . 1/4 cup red onion
    . Salt and Pepper (to your taste)
    . Garlic (to your taste)
    . Hot Mustard (to your taste)
    . Lemon juice (to your taste)


    Pre-heat oven 400 degrees. Place zuchinni, onions & mushrooms on tin foil; season tilapia with garlic, salt & pepper and place on top of veggies. Mix together hot mustard, lemon juice and other spices to taste and drizzle on top of tilapia and veggies. Close up tin foil on all 4 side & crimp to make a "packet. Place packet in pre-heated oven for 15 - 20 minutes. This recipe is for 1 serving. Just adjust for additional servings.
