Baked Stuffed Artichokes

Had the urge to make these last night; came out great!

This is for two servings, 226 calories, 6 g of fat for each

This is for two servings, 226 calories, 6 g of fat for each
- 2 artichokes
- 2 T Parmesan
- 1/4 c bread crumbs
- 2 t light olive oil
- 1 T dried parsley
- 1/2 T dried basil
- salt and pepper to taste
- Preheat oven to 400F.
- Cut of stems and top quarter of artichoke with serrated knife.
- Using kitchen shears, cut tip off of outer leaves
- Place artichokes in oven safe casserole or dish.
- Stir together remaining ingredients
- Spread leaves and push breadcrumb mixture using a spoon.
- Fill water in the bottom of the casserole about 1/2 inch from the bottom--don't let it touch the breadcrumbs!
- Cover tightly with tinfoil and bake for 60 minutes.
- Enjoy stacking leafy goodness.
