Baked Stuffed Artichokes

Had the urge to make these last night; came out great!

This is for two servings, 226 calories, 6 g of fat for each
  • 2 artichokes
  • 2 T Parmesan
  • 1/4 c bread crumbs
  • 2 t light olive oil
  • 1 T dried parsley
  • 1/2 T dried basil
  • salt and pepper to taste
  1. Preheat oven to 400F.
  2. Cut of stems and top quarter of artichoke with serrated knife.
  3. Using kitchen shears, cut tip off of outer leaves
  4. Place artichokes in oven safe casserole or dish.
  5. Stir together remaining ingredients
  6. Spread leaves and push breadcrumb mixture using a spoon.
  7. Fill water in the bottom of the casserole about 1/2 inch from the bottom--don't let it touch the breadcrumbs!
  8. Cover tightly with tinfoil and bake for 60 minutes.
  9. Enjoy stacking leafy goodness.
