Huge milestone: my first steak...

I feel like I should celebrate... I just cooked a steak for the first time in my life!
It's been 8 months since I decided that if conventional "healthy eating" had given me diabetes and a host of other problems, maybe LCHF would reverse them. So I've been eating meat products every day and the results fully support my decision. Carbs, even in moderate quantity, even organic, whole, bla-bla-bla, are poison to me. There's no longer any doubt on my mind, I tried a couple of times to eat small amounts of vegetarian staples and it took me weeks to recover. Even avocado I can only eat as a garnish. Strangely enough, I have no adverse reaction to controlled quantities of low carb fruit (berries, loquat). But I diverge (as usual).
Suffice to say that when I dived into LCHF I had been a vegetarian since my teenager years. I know 100 ways to cook brown rice but I never (until today!) cooked anything that was once alive. Every single meal since starting LCHF has either been cooked by my husband (most of them) or in a restaurant.
But my husband had to go away for a couple of days. And I've just started a meativore month. So into the kitchen I go and I managed to pick a steak and fry it in some pork lard. I realise this is a very unimpressive event but, for me, it was a huge, HUGE, milestone. Made even more so by the fact that I was hungry and really enjoyed my dinner!

I was a seafood "vegetarian" for 26 years and lactose intolerant / dairy free for over 10 years. My poor fiance...he has been staying out of town to help with his folks and only comes to visit me once a month now. He came to visit right when I started keto and found all these packs of bacon in the fridge and blocks of cheese...he thought I had started seeing somebody else! Who's eating all that bacon?? HAH!
I told him about my diet change and he just couldn't be happier since he was on keto for a while before I started it.
I still won't do beef or other red meats, but I'll do chicken, pork, and turkey. It's pretty weird to handle it...but I'm really digging pork chops fried in bacon grease!

I top my steaks with mushrooms that have cooked in melted butter. YUM!0

I share your feeling about carbs. It has been 8 months since I ditched carbs and my health is starting to tilt in right direction for a change. Enjoy the meat.0
