Easy Huevos Rancheros

I found this recipe in a Prevention cookbook that my mother gave me. I love these! They are healthy and you can eat them for lunch or dinner as well as breakfast. This comes from the Breakfast and Brunches section.

4 large eggs
4 corn tortillas (6" diameter)
1 cup canned refried beans
1/2 cup salsa
1/4 cup (1 ounce) shredded reduced-fat cheddar cheese

Preheat the broiler. Lightly coat a baking sheet with nonstick spray. In a medium skillet or saucepan, heat 1 1/2" water to boiling. Reduce heat to low Gently break the eggs into the shimmering water. Cook 3 to 5 minutes, or until the whites are set.

TIP: I find it easy to poach my eggs in a coffee cup in the microwave. I fill a coffee mug 1/3 full with cold tap water, crack an egg into the water and microwave on high for 50 seconds. Drain water and lift out egg with a spoon. Easy poached egg. Caution: Don't go over 50 seconds or the egg may explode in the microwave (very messy).

Meanwhile, place tortillas on the prepared baking sheet and heat under the broiler 1 minute, or until slightly crisp but not brown. Flip tortillas and spread untoasted sides with 1/4 cup refried beans each. Return to broiler and cook 1 minute or just until heated through. Top each tortilla with a poached egg, 2 tablespoons salsa, and 1 tablespoon cheese.

Return to the broiler and cook 30 seconds, or just until the cheese melts.
