Low Calorie Tomato Soup (67 calories per serving)

Dice and saute in water until tender:
2 yellow onions
4 cloves of garlic
1 can of whole peeled tomatoes with liquid
2 Roma tomatoes
Add to taste (I like a lot of heat)
black pepper
crushed red pepper
cumin
coriander (optional)
ginger (optional)
Stir in
1 can condensed tomato soup
6-4 cans of water (personal choice of soup thickness)
1 chicken/ vegetable bouillon cube
Bring to a boil. Turn off heat. Blend until smooth (I prefer an immersion blender). Careful if using a stand alone blender.
Serving size is 1.5 cups (44-67 calories)
I add fresh bean spouts or shredded cabbage to mine for texture and bulk for 10 or so more calories per serving.
