I love to meal prep on Sundays. Looking for folks who want to share recipes,ideas and tricks to successful meal prepping.

I'm always looking for ideas too! When I prep, I stay on track better, but I have to be careful that I don't get too bored, because I like a variety of good eats!!
I work Monday to Friday and am a horrible morning person, so breakfast is always my one for sure prep. I typically rotate a version of one of these things each week (and by version I mean, I don't follow recipes well, I see them more as a guide!):

Work lunches are typically a large salad with some version of protein that I prepped (balsamic beef, pulled pork or carnitas, taco meat, shredded chicken) or even canned salmon, shrimp or tuna. I usually keep leftover homemade soups, stews and chilis in the freezer too. These are some of my must haves in the freezer for lunch/snacks on the run too:

I tried my hand at making the spinach tomato egg muffins last night. Both my 7yo and I liked them very much.
Quick question though...I pulled the recipe into MFP and was really surprised that 1 muffin listed as 326 calories with over 900g of sodium.
Struggling to wrap my head around that as the individual ingredients just don't seem to add up to the above numbers.
Anyone have any thoughts/information about this?

I do this too. I am a lazy one person cook. I prefer cooking for others To stop this I batch cook frequently. Yesterday I put on the oven, roasted 5 sweet peppers, 6 portobello mushrooms, 4 corn on the cobs, a load of Quorn, 4 big tomatoes and a bulb of garlic. That is now in the fridge and will supply me for sarnies/ fajitas/ pasta or whatever I want for the next few days.

Double check that MFP didn't mess up the the measurements when it tried matching ingredients. I just pulled it in and get 112 calories per muffin. It didn't recognize 8 cherry tomatoes.... it tried to say 8 containers!! I modified it to an estimated 1/2 cup. (The egg muffins I make are my own version lol... I used that link as the closest comparator I could find, but so happy to hear you liked them!!)0 -
My favorite oatmeal recipe for work mornings onceuponachef.com/2014/03/amish-style-baked-oatmeal-with-apples-raisins-walnuts.html I usually make it with blueberries, walnuts, raisins. I use almond milk, 1/2 the butter, 1/4 cup sugar (brown sugar) to cut the cals. Greek yogurt and honey on top. Make one every Sunday and it lasts the whole week.
Also made it with cherries (in season and cheap right now!) instead of blueberries and that one was great.0 -

I had problems with the builder last time I used it. I've had it both under and over. I have no ideas what to do. I'm just confirming that yes it always doesn't work right. I will suggest what Kimberwolf did -and will go back and check the measurements.

New to this group and wanted to say thank you for the recipes. I am going to try the egg muffins, or quiche since I have 5 doz eggs in my fridge right now. I love the other recipes a well!0 -
Kimberwolf71 and Getup25 thanks for the tips. You were spot on. It SAID it made a 100% match, but the recipe was actually WAY off. I adjusted it to it's correct ingredients and the calories and sodium are now much more in line with what I anticipated for this type of recipe.
And a big THANK YOU for this new breakfast option! I think next time I'll try adding a smidgen of diced ham!0 -
These comments need a like button! Glad you got the calculations working properly! You can mix up those egg muffins in so many ways! I really enjoy sauteed peppers, onions and ham. A little feta is a decadent treat ☺0
