Hey Guys!!


I'm Having a slight problem and I don't know where else to turn.. I'M GETTING SICK OF ALL THIS MEAT!! I also Hate most vegetables... I only like broccoli, Spinach & Zucchini from the list that we are allowed... In the beginning it was new and wonderful, but i'm really getting sick of cheeseburgers and chicken breasts... I've decided to be off the cheeseburgers for a week and try just turkey breast and chicken for the time being... The thought of a cheeseburger right now makes me want to throw up... I guess what I'm trying to say is that I need more variety... Does anyone have any ideas as to what I can do or any recipes maybe?? for like a soup or a chili??? Thanks

    I make a tom kha gai soup with chicken broth, and coconut milk as my base. I throw in lemon grass, lime leaves, zucchini, baby book choy, mushrooms, ginger root, fish sauce (for flavor), and sometimes little pieces of chicken (or not). It's very tasty and different than the usual Atkins meal.

    You can also use shiritaki noodles and veggies with broth to make a noodle soup.

    Or a veggie wrap using low carb tortillas - Caesar salad wrap - or a BLT wrap...

    I know how you feel! I try to have a lovely full fat cream cheese portion now and again with a small green salad or tuna with mayo salad to break the meat monotony.

    I found this website with lots of recipes. Also, the other day I had a can of chicken in water and I mixed it with a 1/2 of an avocado (if you like those) and had that ontop of my bed of lettuce. It was SO good and something different.

    This site has TONS of recipes. I made the taco bake and even my husband liked it. (Of course he added rice).

    Here’s a broccoli salad recipe that I've tweaked slightly to make it low carb. It is super good, but it does include bacon pieces:

    Ingredients:
    • 1 bunch broccoli, uncooked, washed; cut into florets
    • ½ cup cooked bacon, crumbled (not bacon bits) – I make mine really crispy
    • ½ cup pecan pieces – the original recipe calls out for cashews, but pecans are lower carb and is just as good.
    • ¼ cup red/purple onion, chopped

    Dressing
    • 1 cup mayo
    • 2-3 pks of splenda or use stevia – maybe 5 drops
    • 2 tablespoons apple cider vinegar

    DIRECTIONS
    Step 1:
    • Mix the broccoli, bacon, cashews, raisins and onions in large bowl.
    • In a second bowl, beat dressing ingredients together gently until smooth.

    Step 2:
    • About 10 minutes before serving, toss the salad with the dressing to allow flavors to meld.

    I don't eat red meat at all, so what I've found to satisfy me many days is eggs! Hard boiled, omelets, egg salad - it is a yummy and satisfying protein that I don't think I'd ever get sick of. Google low carb recipes and you will find plenty of ideas to help you out!
