rhubarb and kale recipes please

I've got 6 rhubarb plants ready to be picked and tons of kale as well. I'd have no problems using the rhubarb in my old life but with lchf...I'm not sure

Also any good kale recipes other than kale chips?

I love kale sautéed with chicken and minced ginger. Just parboil the kale in salted water for a few minutes to remove the bitterness.

I don't know how to make rhubarb nice without sugar! I turned down my mum's home grown produce the other day for that reason :-(

Kale is another thing. I make salads with it raw. You have to scrunch the dressing into the raw kale with your hands - really massage it firmly - to make it soft and tasty. I make a dressing with lemon, olive oil and tahini which is delicious.

Would using slenda on the rhubarb, be totally against the rules? I have some too and was thinking of stewing it with slenda or diet 7.up, The diet 7 up takes the sourness out, and we are allowed that on low carb aren't we? then we can serve it with a dollop of cream and some crushed nuts. Maybe put a bit of ginger in to give it a bit of a lift.

I made a knock off of the Olive Garden's Zuppa Tuscona soup...it has kale with sausage, etc. Let me know if you want my recipe. It was AMAZING.
