Speaking of hollandaise sauce, here's even an easier one and it is so delicious - no cooking:
2 egg yolks
1 Tbsp Lemon Juice
Dash of Salt - to your liking
Dash of Paprika - to your liking
1 Stick of Butter
Put the egg yolks, lemon juice, salt and paprika in a blender and give it a quick blend. Melt the butter to just the melting point, don't let it get too hot or over melt (if that makes sense) and then slowly pour the butter in the blender while pulsing the blender, you can hear it thicken up and that means your doing it right. Super easy and super delicious. Every once in a while, I don't quite get it right and it doesn't thicken up and then you waste those ingredients, but I just start over and in less than 5 minutes you have a delish sauce for whatever. I like to dip my artichoke leaves in it or spread it over my omelette and yes use the yolk. This way of eating may seem counter productive to everything you've learned before (it does/did for me), but for me it has truly been a Godsend. Not just for losing weight, but I feel so much better on this diet, mostly my digestive issues are pretty much nonexistent now. I'm still learning too, Every. Single. Day. Good luck.0 -

@walkinthedogs Thanks for that! What does it go well with? (Sounds stupid but I'm just getting to grips with cooking - I used to cook but I've gotten lazy this last year or so).
Funny you should mention digestive issues, that sounds amazing because I have a long history (i.e. my whole life bar my childhood) of "going" to the toilet probably on average once a week, and often only once a fortnight. I'm nervous about eating this way because like you, it contradicts everything I thought I knew about nutrition, but there's no harm in trying and I'm pretty optimistic0 -

This might sound silly, but is it possible to eat a low carb diet that isn't too high in animal produce? I'm not a vegan or a vegetarian, but I was wondering what the general consensus is regarding meat substitutes among low-carbers. Are things like soya mince (the one I buy is gluten free) and quorn sausages too high in carbs?
Also, while I can and do eat dairy, I always get a little nauseous if I have too much. Are there any decent vegan coffee creamers (preferably ones that don't kurdle too easily, Coffee Mate just doesn't work in my acidic Douwe Egberts coffee). Sorry for the fifty questions, just trying to find my feet!
To the first question about eating soya and quorn, if the carbs fit your macros, go for it. For the coffee creamer, try coconut cream! It usually comes in a can, and you can store it in a container in the fridge for upwards of a week or so. It's also great for making things like ice cream, Popsicle, and sauces!0 -

My friend swears by it for thai curries and the like. Ironically, I used to go mad when he used too much haha0
