Should I be eating more?

I have been frustrated with my lack of weight loss lately, so sat down and spent some time going over my diary with a judgmental eye (need to reduce my sodium). My caloric intake is set to 1700 based on the plan with my dietician. On workout days, I am to add an extra 200-400 calories depending on the workout. I have recently added in extra workouts (Muay Thai) and with the beautiful weather I am walking over 5k on my rest days but I think I am screwing myself over now.
Last week my average calories burned was 1026.5. My daily calorie average was 2060.5. So, I think this means that I am only eating 1026 calories that aren't being used...which I am thinking is too low. My BMR (I think thats the right term) is about 1546.
My workout schedule looks like this:
Mon am: C25k - 30 mins
Mon pm: training session with PT (60 mins)
Tues & Thurs am: 30 min bike ride
Tues & Thurs pm: Muay Thai (60 mins)
Wed (rest day): light bike ride (30 mins) or easy walk (5km)
Fri am: C25k
Fri pm: training session with PT
Sat am: Group functional fitness class (resistance and cardio) 60 mins
Sun am: Tough Mudder training group: 60-90 mins (however long it takes to do the work)
After each activity add a min of 10 mins stretching and rolling.

The main issue here is that caloric intake and caloric expenditure are very hard to track accurately. Consequently, it's quite difficult to conclusively say what could be going on with regards to energy balance.
What is your current height/weight and if you know it, bf%?0 -

I'm down overall about 1.5-2 lbs in the last 6 weeks (lots of yo-yo'ing), hence my absolute frustration this morning.
I haven't discussed this with her as my number of sessions are up and I don't know if I have seen enough of a value to continue. (That sounds meaner than it is meant to...) I lost 70 lbs of fat before I started with her and since then have only seen minimal weight change but have seen an increase in my athletic performance and my recovery is beyond amazing!
I can just keep on with what I am doing, mostly because I am insanely in love with my activities but at the same time I would really like my outside to match how I feel and above all, I do not want to be creating any self-defeating eating behaviours.0
