Mine is a dessert:
Strawberry Creams (~50cal each)

-starwberries
-cream cheese (I use neufchatel)
-vanilla flavour
-powdered sugar
-cinnamon sugar graham crackers

Cut the tops off of your strawberries and core them with a knife. Set them upside-down on a paper towel to drain the excess juices. While they drain, make your filling. Do this by mixing a lump of cream cheese with some powdered sugar- play with the consistency until you find one slightly stiffer than you want. Then, mix in some vanilla. You should have an off-white delicious paste. Next, stuff the strawberries with the filling. Finally, crush your grahm crackers into a crumbly mess and roll the stick tops of the filled strawberries in the crumbs to create a yummy “crust”. Eat instantly, do not share, fight for your spoils. If you're watching your carbs, ditch the crust.

    Avocado Egg Salad

    1 avocado
    3 hard boiled eggs
    Dab of mayo (I use 15g of the Kraft mayonnaise with olive oil)

    Mash the avocado, cut up and add in the hard boiled eggs. You don't need to add mayonnaise, but I do to make it a bit creamier. Season it (or not) however you'd like, and there you go!

    I usually get 3 servings out of it. I like it on an English muffin with Swiss cheese or mixed with 3-4 oz of grilled chicken.
