Burgers

I'm home sick, watching barefoot contessa. She's planning a beach barbecue and making burgers. Using 80/20 she added 3 tbsp olive oil, mustard, salt pepper. I never thought to put oil in my burgers for more flavor.
Already asked Tony to pick up burgers for tonight.
What does everyone else do for theirs?

I stole this from our local market. They sell pre-made patties with these ingredients. Pretty tasty.
Ingredients
1 pound ground beef
1/2 cup crumbled blue cheese
1/4 cup crisp crumbled bacon
1/2 teaspoon granulated garlic
1/2 teaspoon kosher salt
1 teaspoon freshly ground pepper
Directions
Combine the ground beef, garlic, salt and pepper in a bowl (and the bacon, if you're using it).
Mix with your hand to just combine.
Fold in the blue cheese into the meat mixture to combine, being careful not to over-mix, or the burgers with be tough.
Divide meat into four equal patties. Grill over medium-high heat for about 6-8 minutes per side or until internal temperature reaches 155°F.
Alternately, broil for 6-8 minutes per side.

I am making burgers tonight. I top mine with gaucamole. Just no bun now that I'm trying to get into ketosis.0

Mine are quite simple: I use about 2lbs of ground beef (20% fat), 1 egg and about a tablespoon of Nom Nom Paleo's magic mushroom powder (dried porcini mushrooms, sea salt, thyme & red pepper flakes).
@wabmester, I'll definitely be trying blue cheese in my burgers next time I make them. That sounds super yummy!0 -
I know @FIT_Goat has talked about how he puts bacon grease in his burgers.0

Oh that's genius!0 -
I've chopped bacon in the blender before and added it to the burgers. Hubby refuses to cook those ones on the grill, too many flare ups due to the fat dripping out.0

I follow Alton's rules - mayo on the bottom, with pepper ground on top of it, burger flipped once, never squished down with the spatula, ever, salt and pepper only on each side, cheese melted on top, ketchup optional. Then I break Alton's rules and pile on avocado, bacon, tomato, grilled onion and jalapenos.0

Oh dear GOD--- I am going to HAVE to try that!0 -
The burgers are too wet to form & hold together if you add grease. Besides just yuk. I like bleu cheese in & on top in addition to avocado. Also mushrooms fried up in good olive oil.0

i'm thinking of stuffing some with goat cheese and bacon0

No giving out my secrets!
Bacon grease in burgers, fry them in more bacon grease, and if they cool enough then smear some cold grease on top. I've had students accuse me of eating a "frosted cookie" until they realized it was a grease topped burger patty.0 -

OMG. That sounds SO GOOD. I need to try that! I like to add bacon grease to raw eggs, beat them, and then fry them in hot grease---they are almost a "pudding"- like consistency and so unbelevably good!0 -

Sounds like a frosted cookie to me!0 -

Lets not forget a mayo - lo-carb ketchup and/or mustard dipping sauce....! (or any combination thereof)

Blended together all three at a ratio Mayo/Mustard/Ketchup of 4/2/1 is my personal favorite (any consistent measuring is fine, but I usually use teaspoons and this is about what i use for two burgers... Might do 6/3/1 so that the first is 2 TBSP, 1 TBSP, then 1 tsp.... I'm intentionally keeping the ketchup low as I have a lot of the leaded stuff to use up. I was an absolutely ketchup junkie before starting this WOE. Thrilled to have broken that.0 -
I like burgers with salt, pepper, steakhouse onion seasoning and lots of bacon grease!!! I cook them in the grease then pour it over top.
I am going to have to borrow @Fit_Goat's cooking style...never thought to mix it in. Yum.

I always grill my burgers, mixing them with egg/ salt/pepper/garlic/shredded cheese/Worcestershire sauce and crumbled bacon. After they're done, melt slice of cheese on top or fried egg.0

We also really like guacamole on our burgers sometimes, too.
Mmmm this sounds delicious. Im not a blue cheese fan (mould doesnt appeal to my tastebuds) but i love feta. I might be giving up dairy for a bit soon, so i'll have to try doing this before then.

Tonight I put Tandoori paste into my burger mix for a great Indian flavour. Goes well with spinach leaves, sliced fresh cucumber, and cream cheese - DH has his on a bun (Cheddar/Jalapeno) and I just eat mine with the veg & spread on top, alongside a red lettuce salad with avocado, & roasted garlic infused olive oil.0

That's a great idea, I never thought to try indian flavors in burgers0 -
I made a mayo mix for egg salad last night that was sriracha, mayo, pickle juice and coleman's mustard powder. When I tasted it before mixing it into my eggs, my first thought was that it belonged on a burger!0

I tried an avocado/mayo mixture slathered across the top of a burger and it was really good.0

Wow Gloss, this sounds good too! I have all those ingredients (that's half the battle with me, having everything)

Sounds delish G! I always love a over medium egg on my burger. But I haven't put all those other things on the inside. Will try it this week...
I wonder if I try to "bacon" wrap my burger on a BBQ grill ~ if that would work? Any ideas?

Maybe if you did it as a basket weave of bacon, whether loose or tight, but I find that bacon sticks whereas a burger might not... I guess maybe rub your grill down with coconut oil or something first??0 -
I've done bacon wrapped chicken, but not burgers. Tell us how it goes.0

Just ate two. The bacon insulated/shielded the hamburger from cooking. At about halfway, I unwrapped the burgers and took the bacon out. Then fully cooked the meat. I cooked an egg on the stove top and put on the burger I ate. The bacon was marvelous, I think I will cook it on the grill now everytime. The grill gave it the fat-smoke wonderful taste. The meat was juicy, I put French's Worcester sauce and chopped up Jalepeno's in the meat. I forgot to put the shredded cheese in the meat, but added afterwards.
It was so good! All of it. I went way over on my calories, cause I ate two of them, oh well, that's why I fast on Thursday's, to make up for my overages.
@KnitOrMiss, it didn't stick, the bacon drippings lubed it up and the drippings fell into the fire and made a wonderful smoke... (if your grill catches the fat on fire, get a Charbroil commercial Tru Infrared. It has a screen that prevents fire flare-ups and it works better than any grill I have ever used.)

I just put slice of bacon on top when burgers are done, I would not wrap and grill0
