    I should not laugh, but I so have to a little. My guy does this too when he adds too much bread back in... And he isn't even low carb per se....just lower than he always was before.

    Currently cooking some bulk pork chops in leftover bacon grease. Once they are cooked, I'll toss in some slivered almonds to toast, then throw in some shredded cabbage. The pork chops keep well for batch cooking. Not sure about the cabbage.
    I've also done sauerkraut and smoked sausage cooked in bacon grease.
    Try adding bacon grease or olive oil to your cooking. Ghee is good as others have mentioned and doesn't usually trigger dairy sensitivities.
    If hubby doesn't like pot roast, would he eat crock pot carnitas? Maybe make without cumin. Throw some seasoning you both like with it and cook it up. Serve on lettuce with some guac / avocados and a low carb salsa. They do exist. I am partial to hot sauces.

    For extra fats, you might also try macadamia nut oil, coconut cream, and some macadamia nut butter with celery sticks. I have been putting cacao butter in my coffee, too. It's pretty good. See bulletproof thread, or just go over here: http://www.healthfulpursuit.com/2015/04/rocket-fuel-latte/

    Maybe some tuna salad. I usually do rotisserie chicken...if you're not doing chicken, just go with canned tuna. It's cheap and good. Add tons of mayo, diced celery, onion, garlic powder, pepper.

    My fiance and I are both doing keto, but we eat very differently. He's more like FIT_Goat and is a red meat monster. He eats beef and eggs like they're going out of style. I don't really eat red meat (pork may or may not be considered - I tend to eat the white tender pork chops).

    Try build your own burgers made with whatever ground meat you can have. For toppings, I suggest guac, mayo, a little lettuce, bacon (of course), and maybe some canned green chilis if you can spare the carbs.

    You might be able to make a low carb soup with Italian sausage. If no chicken, try a vegetable broth base. Add extra extra olive oil, some fresh or frozen kale. I used to put diced leeks in mine, but can't spare the carbs now. Some powdered onion might work. Fresh garlic. Fresh sage.
