    Hey everyone! Sorry I've been MIA this week! I've read through the past few days though, to catch up.

    Holy crap, I typed a very long post to catch up on everything...and it only posted the first sentence. Lovely. I'll try and give you the cliff notes version I guess.

    April - I only cook two or three times a week, but it's usually enough to last for several days. This makes eating healthy and homemade meals much more sustainable! I also plan those meals out for a week in advances, and have specific days and times set aside for shopping. This way I don't run out of food, and thus avoid that whole situation where you only have two hours to dinner, no food in the cupboards and not enough time to go shopping, prep the food and then eat it. I also never focus on what to avoid eating. Carbs, protein, fats, fiber...our body needs all these things. But my focus is on eating more whole foods. I try to have foods with lots of fiber and protein as those are more filling.

    Sherry - so sorry about all the problems your body is giving you! I threw out my back five years ago and it is the worst pain I dealt with. I'm not sure how plausible this is while living in Greece, but have you considered a physical therapist? I have several friends with injuries and issues from exercise that did physical therapy and it did wonders for them. Just a thought. Good luck on all the traveling! Hope the kiddos do well!

    Laura - Glad to see the recovery is continuing to go well. I know today is tough with your race going on, but I wanted you to know that you are an inspiration to me. You got hit with a set back but didn't let that stop you. You keep pushing and working towards your goals and it's awesome!

    As for me, this week was crazy in how much rest I'm still needing. Basically, for five years I've been having to do everything. I volunteer at church and the PTO, have our three kids, watch a fourth, run the house, do the yard work, cook, clean, etc and all by myself. Hubby has been in school so as soon as he is home from work he is doing homework. Apparently my body finally had enough. I got valley fever and have been having to rest a lot! It also hit about 115/120 here temp-wise so the heat doesn't help with motivation. But every week I feel a bit more energetic. So I think I just needed a month or two without any intensive training. I have a church camp next week, and then only three more weeks of watching the two year old. Then my life will continue to ease up. Two kids will be in school full time in August, and my youngest will start preschool. Hubby graduates in October and then I'll have my partner in crime back with me. Half of our married life he's been in school. It will be amazing to have actual help again!
    In other news, I've tried overnight oats and they are amazing! Delicious, low calorie, low sugar, filling, and easy to make. Score one for breakfast! I've also been having better snacks. Except for yesterday where I just had one of those days. I'm scratching it off and starting fresh today. If I can't have a day of indulgence here or there, I will never stick to this. But the rest of the week was very good food-wise.

    Val, just keep your focus on the light at the end of the tunnel, even if it's still a bumpy road for the next few months. I, for one, sometimes question why I didn't just hand my kids over to daycare like other moms, but I really wouldn't trade it all for anything in the world and I bet you wouldn't either.

    Well, packing odds and ends. And I have finally a clue about my chest problems. Oh, and my back miraculously healed within a few hours last night, barely aches now. I think a lot of this stuff is interrelated and I'm getting close to figuring it out. Ironically my sister is having the same issues. We will be comparing notes when I get there. I can't wait to see her and my parents and nieces and nephew tomorrow night. Yay!

    Val you are very organized, sounds great...

    Just got back from hike in the hills of Napa, from top could see all over the valley. Just my daughter Julie and I, she is the one who likes to hike with me, looking forward to living closer.
