This recipe makes a large shepherd's pie using vegetables and the NS Sloppy Joe mix. The "mashed potato" topping is mashed cauliflower. The whole thing is ridiculously filling. Next time I might add enough extra lean ground beef to make it 2 dinners instead of 1.
I used a large head of cauliflower and only needed half of my mashed cauliflower for the topping - which is great because this stuff was awesome. The Sloppy Joe mix counts as 1 NS dinner. The goats cheese and balsamic are each 1 extra. The rest are unlimited vegetables.


Ingredients:
Mashed topping:
1 large head of cauliflower (or frozen)
6 large cloves garlic, roasted
25g low fat goat cheese
1/2 tsp nutmeg
salt and pepper
Shepherd's Pie filling:
1 pkg NS Sloppy Joe mix
2/3 cup low sodium chicken, beef or vegetable broth
1 tsp aged balsamic vinegar
3 mushrooms, chopped
1 carrot, sliced
1 celery stick, sliced
1/2 small onion, diced
salt and pepper
Preparation:
1. Place the cauliflower in a microwave safe casserole, cover and microwave on medium power until well cooked (about 20 minutes). A sharp knife should slide into the cauliflower stalks with no resistance.
2. While the cauliflower is nuking, place the garlic cloves on a baking sheet lightly sprayed with oil and bake at 400 degrees for 8 to 10 minutes until they start to brown.
3. Prepare the onions, carrot, celery and mushrooms. Place in a small casserole (about 8" x 8") that has been lightly sprayed with oil. Season with salt and pepper and bake uncovered at 400 for 20 minutes.
4. Drain the cauliflower, transfer to the food processor. Add the roasted garlic, goat cheese, and nutmeg. Puree until smooth. Salt and pepper to taste. Set this aside.
5. Add the broth and balsamic to the onion mixture. Stir in the NS Sloppy Joe mix. Return to the oven and bake uncovered for 10 minutes.
6. Spoon the mashed cauliflower on top of the onion-Sloppy Joe mixture and spread to cover. Don't make it perfectly smooth. The raised areas should brown a bit and develop a nice caramelized flavor.
7. Set the oven to broil and 450 degrees and place the shepherds pie on the top rack uncovered. Broil for 10 to 15 minutes until the top has browned to your liking.

Question: Peter, let me get this right. This is ONE dinner? Heavens how do you eat all of that in one sitting? Ok, what size casserole dish did you use? I'm full just thinking about it...can't wait to make it. I have not had goat cheese so just in case, do you recommend another cheese to use?
Answer: Yes, it's ONE dinner. The picture shows an 8" x 8" casserole. This recipe uses only a very small amount of goat cheese, so if you can't find LF you could still do this. However, you could reasonably substitute FF plain Greek yogurt or FF cream cheese or soy milk. A small addition of dairy gives it a more creamy texture. The goat cheese just gives a nice flavor accent.
