Rhubarb!

My forest of rhubarb is ready . Ideas please? I can only eat so many rhubarb crumbles before I look like a whale :)

    I stew rhubarb with stevia and a bit of water. You could also use another sweetener such as agave. I add a bit of water so it doesn't burn. I let it cook on top of the stove until it gets the consistency I want. I then add however much sweetener it needs. It all depends on the rhubarb.

    For breakfast I have 1/4 cup steel cut oats. 1/2 cup of stewed rhubarb. 2 oz of Greek vanilla yogurt. 1/2 T of sliced almonds. Sometimes 1 tsp chia and 1/2 T ground flax.

    To me this is like dessert for breakfast. My family loves squares of any type and when I have this for breakfast, I don't miss out on them. I had a nice surprise yesterday when I looked at my rhubarb patch and realized I could get another picking from it.
