I am noticing I am peeing a lot more today. Does that mean I have successfully replenished my glycogen levels?

Usually wouldn't have anything to do with it, that would cause more water to be held until you did an intense or endurance cardio that used them up and freed the water - but usually you sweat then, so there it goes.

Could be by eating more you are getting more water in your food, less needed in your free drinking, and out the excess comes.

Water in food does count, though rarely considered. But your body only needs so much depending on activity level. So more one way, less another.

As long as the body is at a deficit, glycogen stores are depleted to some extent compared to what they could be.
Well, unless you made a very high carb day even with deficit eating.

That's why I always try to have my rest day also be a TDEE day before weigh-in, which also happens to be my long bike ride. Carbs as topped as off they should be.
