Cream Cheese Danish (using NS pancake mix)

Cream Cheese Danish
1 NS pancake mix (take out 1 tsp for cheese mixture below)
2 pkts Splenda
1/2 tsp fresh lemon zest
1/8 tsp baking soda
1/8 tsp baking powder
1/4 tsp vanilla ext
1/3 c buttermilk
for filling:
2 oz ff cream cheese (softened)
2 pkts splenda
1/2 tsp fresh lemon zest
1 tsp fresh lemon juice
1 tsp egg beaters
1 tsp of the dry pancake mix
SF jam of choice (optional)
Preheat oven or toaster oven to 400 degrees. In a small bowl, mix together all of the ingredients for the cheese filling. Set it aside. In another bowl, mix together ingredients for the cake portion. Pour the batter into a single serve baking dish that's been sprayed with cooking spray. Dollop the cheese mixture on top however you wish. I've always done in in a rectangular pan and done 2 strips down the middle to look like a regualr danish. If you want a fruit with the topping, then put it on top of the cheese mixture. I usually soften it in the microwave first. Sometimes it's even better to wait until it's cooked and add the jam afterwards. Bake for about 20 minutes or until done. Allow to cool compleatly before eating. I usually make mine the night before, or you can pop it in the freezer to chill it fast! Serves 1. Counts as your breakfast entree + protein. Just add fruit to complete your me
