Toasted Coconut Chips

I have a severe addiction to toasted coconut chips, but after checking the nutrition panel, I saw that the brand I had been buying generally had around 14g of sugar, so I decided to try to make my own.
I'm so excited!! They actually turned out really good. I started with a basic sweet and salty version, then made a version with cinnamon and nutmeg, and then made a salt and vinegar version! Only about 4 net carbs and 19g of fat! Much better than 13 net carbs!

How did you flake them? I had a bad reaction to the sodium dioxide used to preserve packaged ones.0

I bought this flaked coconut, organic and sulfite free:

I used one package, 1/4 cup melted coconut oil, 1/2 tsp to 1 tsp sea salt, and about 3-4 packets of truvia. Baked on 300 degrees for about 10-12 minutes, stirring every 3 to 4 minutes, and just took them out when they had turned a golden color.
For the salt and vinegar, I just took out the truvia and added 1 to 2 tbsp of apple cider vinegar. Those turned out the best.
And I learned NOT to coat the foil on my pan, since the chips were already coated in the coconut oil. I think it took longer in the oven because of this.0 -

What store do you buy them from? I couldn't find them locally at all. I found Bob's Red Mill, but those pieces were tiny and ended up using those in keto granola. If you're ever in the Seattle area, PM me, and I'll tell you where I get them. They're $3.49 for a 7oz pack at our store, so Amazon is actually a better deal (if you need 12). Expiration date for mine is March 2016.

Yum! I buy them from iherb; they also sell toasted versions. It is so humid here now though that the ones I toasted last month are a bit soft. Need to toast them again!

The group I bought from Amazon has an April 2016 expiration. I will probably have bought several more boxes by then. LOL0
