I find I do much better if I can throw something I've pre-made in the microwave, sprinkle some cheese on and just eat it. Chopping and cooking during the day (or even in the evenings) sometimes just seems like too much work.
What are some things you guys cook in bulk to reheat (or eat cold!) later?

My go-to is boiled chicken. I boil a package of leg quarters or drumsticks on the stove top for about 4 hours and eat it all week at least once per day. The broth is gelatinous and healing. I usually just include chicken but sometimes add salt.

I used to hard boil eggs. They keep in the refrigerator for a week.

You could do the same with fish fillets but I think these cook on the stove almost as quick as a microwave.

Ground beef with onion powder, or onions depending on carb needs, delicious microwaved with some cheese&/or sourcream added
Soups, precook a large batch of chicken broth, celery, chicken and some onion
Make a large salad that can last for a few days, top it with some precooked chicken breast or ground beef
Cheaper cuts of steak, ex london broil, do well reheated with a little mayo on top
