Southwest Chicken and Rice

I am SO glad that I found this group! I love to cook and am always looking for new recipes to try out! Here is one of my favorites AND at only 339 calories you can't go wrong! Feel free to mix in any extra veggies like bell peppers or jalapeños. I like to add chipotle peppers in adobo sauce to mine to add a little extra spice! Just be careful when buying salsa, many of them are LOADED with extra sodium. The 339 calories includes topping this with a some light shredded cheddar cheese so if you take that off you'll decrease the count even more!
Southwest Chicken and Rice
1 large onion, chopped
1.5 teaspoon unsalted butter 1
.5 cups water 1
cup salsa
1 cup uncooked rice
4 boneless skinless chicken breast
Salt, pepper and garlic to taste
In a large saucepan sauté the onion with butter until tender. Add water and salsa and bring to a boil, mix in rice and seasonings. Place chicken on top, cover and simmer for 10 minutes. Flip chicken after 10 minutes and cook for another 10 or until chicken is cooked through and rice is tender.
FYI: This recipe was made with white rice. If you want to use brown rice instead just bump the amount of water up to 2 cups and cook for a little longer to make sure its nice and tender.

sounds good. I bet a little fire roasted corn would go good in it too I'm going to try this recipe this week for dinner one night0
