Healthy Summer BBQ Side Dishes!

What are some of your favorite cookout side dishes?! I cannot get ENOUGH tuna salad. Unfortunately, pasta and mayo is not always conducive to a healthy diet, nor is tuna if you're watching out for mercury
But, you can still enjoy this awesome dish!
*Single Serving Portion*
What You Need:
1) Some sort of high fiber/protein pasta (I like Barilla Plus Penne Pasta, because I'm not a huge fan of whole wheat pasta, but it can be used).
2) Lite Mayonnaise
3) Canned White Meat Chicken (may use Rotisserie Chicken if preferred as there are no added ingedients).
Cook your pasta; portion out 1/2 cup-1 cup depending on your carbohydrate needs for the day. Mix 1 Tablespoon of a Light Mayo (Not fat free, fat free = chemical crap storm), and 3 ounces of chicken. Add a little salt and pepper or other seasoning for taste.

Broccoli, Grape, Cucumber Salad
I usually just eyeball everything to make however much I need. Just chop everything cup, add a little mayo and fat free plain yogurt, a squeeze of lemon, some black pepper and you have your side dish. It is very good and refreshing on a hot day...no cooking required. The actual recipe calls for full mayo, but I tried with 1/2 the mayo and yogurt for the other 1/2 and it turned out great...gave it a nice tang.0 -
Cabbage and rice salad (serves 4-6 as a side)
Cook 150 grams brown or wild rice to packet instructions.
Slice up a raw Sping green cabbage really fine. Chop in 8 salad onions.
Cover in juice and zest of half a lemon.
Dry roast 50 grams of pine nuts.
Chop a large handful of dill.
Measure out a tablespoon and a half of raisins.
Combine the above.
For the dressing add 1 tablespoon tahini, 1 cup low fat yogurt, juice of half a lemon, 1.5 tsp of honey and season well.
Combine with salad and you have a super healthy take on slaw.0
