Nice article that shows cooling and reheating pasta reduces its GI.

    I've read that the more you cook the pasta the lower the GI (breaks apart the bonds or something)... as well as adding lemon to it (or adding lemon to anything). I'm not sure how much it lowers the GI and since pasta is so high to begin with... might not be significant enough.

    I hope you're right. I see my dr again in January with the hope of being taken off metformin and losartan. Fingers crossed.
