4 week anti-inflammatory diet

I will be starting a 4 week anti-inflammatory diet prescribed to me by a naturopathic doctor on Monday (August 17th). I'm to avoid gluten (i.e. wheat, barley and rye), I can occasionally include: quiona, millet, amaranth and rice. I have to avoid dairy and limit sugar intake, no refined (white)sugar, but I can use RAW local honey or organic grade B maple syrup.

I can eat: Organic Eggs, Organic poultry, wild caught seafood, organic seasonal produce - dark leafy greens and a rainbow of colors every day. Cooking oil: unrefined extra virgin coconut oil, avocado oil or grass-fed/pastured butter/ghee for cooking.

I need some help with recipes. I'm not restricted from red meat or pork, but I have to eat it in very limited quantities because it causes so many GI issues for me. I have IBS and Ulcerative colitis. I can't eat spicy foods either. If you have any recipes that can be tweaked to meet my restrictions or have some good websites with recipes I would really appreciate it. Also I work full time so I'm away from my house 11 hours a day and I have a 4 year old daughter, so easy recipes and batch recipes would be ideal.

    Unless you are trying to heal a specific injury, why a four week diet? For a chronic or long-term condition you need a different way of eating.

    Honestly, your best bet is to look at the hundreds of low carb sites that HAVE recipes and you tweak them to fit your needs.… Ketogenicwoman, Dana Carpenders "Hold the Toast", ruled.me and now DietDoctor.com have tons to review….

    Look online for Paleo Autoimmune Protocol recipes (or 'AIP'). Paleomom.com, autoimmune-Paleo.com, and the blog "Phoenix Helix" all have many AIP recipes.

    The AIP is a bit more restrictive than the diet you'll be on, but you can always adjust the recipe to your liking if you want something that isn't listed.

    The AIP also avoids eggs, all dairy (butter and ghee included), nightshades (veggies like tomatoes, white potatoes, peppers, and spices in the nightshade family like hot peppers etc), nuts, seeds in addition to grains and sugars.

    Can you eat coconut? Many AIP recipes include coconut oil, coconut butter, coconut milk, etc.

    @MariahMichaels I have been eating basically the same diet for 10 months and I bet after 4 weeks you will be in love with it. With that being said many will give up before the first 2 weeks are behind them.

    I thought I was going to die for the first two weeks but I expect that was due to 40 years of abusing carbs plus my senior citizen age with extremely poor physical health.

    Arthritis pain was so low after 30 days I started to just ignore it. The IBS started to resolve in 90 day and gone in 180 days and still has not returned. Weight loss has only been huge but I am down by another 30+ pounds putting me under 200 pounds for the first time in 22 years.

    Hang in there and follow your healthcare provider.

    Be careful with millet and amaranth they can be really rough digestively. Good luck, I hope it helps you achieve what you're looking for.

    Taco meat is one of my staples. I make a big batch & freeze it in smaller containers. I can then pop it into the microwave and add avocados, guacamole, salad, whatever, or eat it on a lettuce leaf like a taco. You could do chicken or turkey taco meat.

    You can also make a bunch of chicken breasts ahead of time with different seasonings and then slice & eat cold or reheat at work & eat veggies/salad/quinoa/whatever with them. I believe quinoa and rice can be batch cooked ahead of time so you can have your portions for the next few days waiting for you to grab them out of the fridge.
