Any tips/recipes?

Hello! I'm new to the keto diet (started last Monday) and I'm having some trouble eating 20g of carbs. I can't come up with food that is low in carbs but also high in fat and protein because I'm a vegetarian.
So I'm looking for ideas!! Does anyone have any vegetarian ideas that will help me get fat and protein but super low carbs? Thanks!

    Being a vegetarian and trying to do Keto will be very challenging as you are cutting out some very easy sources of good, healthy fat: meat, eggs, dairy (cheese, heavy whipping cream, sour cream, butter, etc.). I am not a vegetarian but here are some vegetables and/or vegetable sources that are high in good fats:

    1. avocados / avocado oil
    2. olives / olive oil
    3. dark chocolate (yes, really!)
    4. nuts (ANY kind) / nut oil / unsweetened nut milks
    5. unsweetened coconut / unsweetened coconut cream / unsweetened coconut milk
    6. red palm shortening / red palm oil (this is NOT the same as "Palm Kernel Oil")
    7. seeds (chia, hemp, peppitas, flax, sunflower) / some seed oils / some unsweetened seed milks
    8. Tempeh (I don't know what your position on soy is, but if you eat soy, I sure hope it's FERMENTED soy - Tempeh is made from fermented soy)

    The issue you will run into is that as a vegetarian, most vegetables (not including the ones already mentioned above) don't have a lot of fat in them at all. :'( I suggest you add any of the above oils or shortening to any veggies you eat.
