Stuffed peppers - NS friendly

I made stuffed bell peppers today for lunch. I'm pretty sure they are NS friendly. The ingredients below made enough for two dinners. And, they were very good. If any of you have any suggestions to make them better or differently, please let me know. I calculated each bell pepper half at approximately 100 calories each.

Two bell peppers, halfed lengthwise, and cleaned of seeds. Yields 4 halves
1 cup Morningstar Farms crumbled meat subsitute (surprisingly good)
2/3 cup cooked brown rice
1/2 cup shreaded ff cheddar cheese
1/4 cup or a little more salsa
Salt and pepper

Coat the outside of each bell pepper half with a little bit of olive oil and salt. We use Lite Salt. Heat the crumbled meat substitute in a skillet. Season it as you would like. Mix all of the ingredients up in a bowl, then stuff the peppers. Pack the stuffing well in the pepper half. Bake on 375 for about 30 minutes until peppers are cooked. I put just a little bit of water in the bottom of the baking dish.
