Transitioning to Higher Caloric Intake

Has anyone begun to transition to a higher caloric intake? If so, how long after reaching your weight loss goal did you start the transition?
I'm on a 1250 daily caloric intake, and hope to eventually transition to a regular healthy female caloric intake of 2000 per day (according to the Canadian Food Guide for a moderately active female). How does someone make that transition without gaining it all back? I'm nowhere near my goal, but am always wondering how the transition will work.
