OMM- One Minute Muffin
2.5 tbsp coconut flour
1/4+1/8 tsp baking powder
pinch of salt (a tad more if you are making a savory muffin)
2 Tbsp Torani or Davinci SF syrup
1 egg
1 TBSP butter (or CO)
2.5 tbsp almond milk(or coconut or half&half)
This is the base recipe. You can eliminate the sweetener and add spices (and shredded cheese?) to make it savory, but you must replace the sweet syrup with 2 tbsp of fluid. Coconut flour sucks up liquid like a sponge.
I either add 2tbsp of cocoa powder, a pinch of cinnamon, and a splash of vanilla extract or just a heaping tsp of cinnamon on it's own for a sweet muffin. Slather it in cream cheese after it is done.
Mix the dry ingredients in a mug until blended. Mix fluids, egg, and oil together in a separate bowl. I have to microwave the butter to melt it first. Then blend the wet into the dry. Make sure they are thoroughly blended. Then microwave for 2 min. Turn the mug upside down on a plate and it will slide right out. Knock the cylinder onto it's side and slice. Then top with butter or cream cheese or put your slices together and make 2 thick biscuit-sandwiches with sausage and egg in the middle. You can toast the muffin pieces as well if you like. I’m usually too hungry to bother, but I'm sure it's yummy.

I found a few great ones for pancakes and one for low carb/low fat pumpkin "fudge." I'm busy trying to figure out how to up the fats in that one! I'll try to remember to post them tomorrow. Feel free to message nag me!0

The OMM sounds intriguing and I should give it a try. When I originally was focusing on gluten-free, I wasn't a fan of coconut flour ... found the items seemed soggy (think fresh warm baking then sealed in plastic bag kind of soggy). Given the price of the flour, I decided to quit experimenting! I definitely know that coconut flour is NOT interchangeable in recipes calling for other flours.0
