Where can I find some quick, one serving bread recipes?

It's summer time, and around our hose that means sandwiches. LOTS of sandwiches. Mostly for lunch, but occasionally, when we've been out in the yard all day, they can serve for dinner.
Most of the innards for these sandwiches I can quite happily wrap in lettuce or cabbage leaves, which I enjoy. But, one of my favorites is Peanut butter and jelly. I'm in the process right now of hunting up a local source of both low carb/ carb friendly peanut butter, and a sugar free/ tasty jelly that I can enjoy which don't cost me an arm and left kidney. (Around here, that's pretty common for specialty foods), but even if I find these mythical items, I don't have anything to put them ON.
Anyone have a site or recipe for a low cost bread that is quick, easy to make for just one person? It can be a wrap, a pita pocket, or roll type bread. I've got a decent muffin-in-a-minute that I make, but it's not quite big enough to make a sandwich on. Non of our mugs are over 3" in diameter. (And, I'd prefer not to have wafer size sandwiches, please ::grins::)

Instead of a mug, try making the MIM on a square tupperware lid....then slice in 1/2 for 2 slices of "bread"
I don't have a lot of experience with low-carb commercially available products since I need to avoid gluten but there are some good ones out there. Joseph's is the brand that comes to mind.0 -
Google "OOPSIE BREAD" . It makes 6 buns and they say you can wrap them in parchment paper and then put in a baggie and freeze. I have refrigerated for several days. use the paper or they stick together. I just pop in toaster or quick pan 'fry' before eating. Makes fantastic sandwiches. You can halve the recipe and make two larger buns...heck make all six! They work great for hamburgers too and I've used them for pancakes and french toast. Easy to make. There is even a uTube video!

I was just looking Thursday night work shift on low carb bread on youtube. There is a few on there that you do in the microwave. All pretty much use the same ingredients. (look up on the youtube such "Low carb bread" or Microwave bread"

2 TBS flax seed (grind to powder if not bought in powder form)
1/2 tsp Baking powder (mix well with flax seed in bowl)
Then add 1 egg mix that very well in bowl and then add
2 TBS water, mix up.
Put in a square plastic bowl (like the throw away kind) or the video I saw had the pre shapped plastic like bread
I have one of those at home. fits a sandwich with a snap lid
Make sure to grease bowl you use with paper towel and oil/butter whatever you want to use
Then pour in batter, flatten it out in dish you use.
Cook for 2 min.
When done, flip it out of container and cut it around the edges to make two slices.
It looked like the bread was firm enough not to fall apart. I want to try this so bad. Looks easy to make.0 -
Thank you everyone! Now, to find the elusive ingredients for the occasional PB&J! Can't wait for Aldi's to actually open, because I've seen several of you listing Aldi's items.
