Creamy low-carb Spiced Broccoli, Celery and Peanut Soup

Ingredients
1xcelery
1xbroccoli
1xonion
3 x vegetable stock cubes
1 tbsp oil/butter or low cal cooking alternative spray e.g. fry light
1 tbsp peanut butter (zero-added sugar)
SPICES/HERBS;
1 tsp parsley
1 tsp coriander leaf
1tsp garlic granules or 2x cloves garlic
1tsp Chilli powder
cracked black pepper (to taste)
Makes approx. 6 servings
Instructions
1. Roughly chop celery, onion and broccoli (including stalks) and add to a saucepan with oil/butter/cooking spray. Stir on medium heat for 5 minutes until they begin to soften.
2. Cover with boiling water and crumble in the stock cubes. Boil and stir to dissolve.
3. Add spices, cracked black pepper and peanut butter.
4. Leave to simmer for 20 minutes.
5. Blend to a thick smooth soup
6. Enjoy your creamy, spiced delicious and filling soup. (Add ham or cooked bacon at end if you want to include more protein)
